Yellowfin & Tricolor
Pepper Croissant

Makes 1 serving

Flavorful balsamic-roasted peppers complement black pepper yellowfin tuna, arugula, and Fontina cheese.

Ingredients

  • ¼ each Green, yellow, and red bell pepper, French fry cut
  • ⅛ Small red onion, French fry cut
  • 1 Tbsp Olive oil
  • 1 Tbsp Balsamic vinegar
  • 1 Croissant (large)
  • 2 tsp Butter
  • 3 slices Black Pepper Yellowfin Tuna
  • ⅓ c Baby arugula
  • 1 oz Fontina cheese, shaved

Preparation

  1. Combine peppers, red onion, olive oil, and balsamic vinegar. Marinate for 1 hour; then grill. Hold hot.
  2. Slice croissant, brush with butter, and toast.
  3. Assemble sandwich with tuna slices, topping with arugula and Fontina cheese. Serve warm.
