Yellowfin Tuna Tacos

Makes 2 servings

This fresh take on fish tacos balances sweetness and chili spice with cool cabbage slaw.


  • 2 slices fresh pineapple
  • 1 Tbsp brown sugar
  • 1 tsp red chili powder
  • 1 tsp ground cinnamon
  • 2 Tbsp mayonnaise
  • 1 tsp chipotle puree
  • ¼ c red onion, diced
  • 4 slices Black Pepper Yellowfin Tuna
  • ¼ c green cabbage, shaved
  • 1 Tbsp queso fresco
  • 2 6” corn tortillas
  • lime wedges for garnish


  1. Rub the pineapple slices with the brown sugar, cinnamon, and chili powder and let rest for 30 minutes.
  2. Grill over a very hot flame.
  3. Combine the mayo and chipotle puree.
  4. Lightly grill the tortillas. Then coat the grilled tortillas with the chipotle mayo.
  5. Add 2 slices of Yellowfin Tuna to each tortilla. Top with shaved cabbage and red onion. Add one slice of grilled pineapple. Assemble the tacos and top with queso fresco. Serve with lime wedges.
