Cajun Yellowfin

Spinach, bacon, and Parmesan cheese star in this comforting egg frittata made with Cajun yellowfin tuna slices.


  • 3 Large eggs
  • ½ c Fresh baby spinach
  • 3 slices Bacon—cooked crispy and crumbled
  • 1 Tbsp Parmesan cheese, shaved
  • Salt and pepper to taste
  • 2 slices Cajun Yellowfin Tuna


  1. Combine eggs, spinach, bacon and Parmesan cheese. Pour into oiled frittata pan.
  2. Bake at 350°F until set.
  3. Top with 2 rolled slices of tuna. Garnish with fresh herbs and fresh fruit as desired.
